When it comes to eating well I find breakfast to be the hardest meal of the day. The morning is such a busy time and I am always so busy that it just flies past before I have even managed to glance into the fridge in search of food. Luckily for me I was sent a fabulous hamper of Ready Brek and some ingredients to enjoy with it to help to inspire us at breakfast time.
Now the girls are fairly easy going with Elizabeth loving a good dollop of Jam in her Ready Brek and Alison enjoys Peanut Butter or even a swirl of chocolate spread.
I am currently at the start of a 12 week transformation plan with my personal trainer which means I am really watching what I am eating so no jam or chocolate spread for me. However I can enjoy Ready Brek with Peanut butter (It is divine) and I have even started making a Ready Brek Peanut Butter Protein shake using coconut milk for after my workouts which is really yummy.
What I really need is breakfast on the go, something I can make the night before to be ready for me to eat in the morning. I am a huge fan of overnight oats using Ready Brek, fat free greek yogurt, a small amount of honey and some fresh berries. You could even add different nuts and seeds if you wanted or leave out the honey if you are avoiding sugar.
I wanted something that I could eat one handed whilst working and so I came up with a super quick Choco-nana Protein muffin recipe.
Choco-nana Protein Muffin Recipe
3 small bananas (the older the better as they will be sweeter)
30g Ready Brek
1 scoop of chocolate protein powder
1 squeeze of Choc Shot
Mix all of the ingredients together in a blender or processor until smooth. Place in a muffin tin (in cases if not a silicone tin) and bake in the oven for 15 minutes on 180 degrees. Remove from the oven and leave to cool before consuming. You could add more Choc Shot or Peanut butter once cooked for taste but I didn’t feel the need. You could also add additional ingredients before cooking such as chopped nuts or similar. If you are not needing the extra Protein then you can remove that and just replace with a bit more choc shot to balance the flavour.
Now I am starting to think of Ready Brek as more than just smooth breakfast oats I am looking forward to making Oat bars or even banana oat cookies to help keep me fuller for long when I am super busy in the mornings.

I used 300ml coconut milk (can be normal milk but I am dairy free), 30g ready brek, 30g vanilla or chocolate protein powder and a large tablespoon of peanut butter (can be replaced with other nut butters).
You can adjust the peanut butter quantity to taste or add some honey to make it sweeter.
