Now we are not lovers of meatballs in our house but seen as we had some chicken breast defrosted in the fridge I decided to do what I do best and adjust the recipe to suit my family. The recipe below has been adjusted from the one in the Free Food Feasts recipe book which I would definitely recommend buying it if you can as looking at the recipes is really inspiring me to get in the kitchen more.
Creole Chicken and Rice
Low-calorie cooking spray
500g chicken breast chopped into chunks
2 tsp dried thyme
1 tsp dried chilli flakes
2 tbsp tomato puree
Splash of water
For the Creole sauce
4 garlic cloves crushed
1 onion, finely sliced
6 celery sticks finely chopped
3 peppers, roughly chopped
2 x 400g cans chopped tomatoes
2 tbsp tomato puree
1 bay leaf
1 tbsp cajun seasoning
salt and pepper
I threw all of the sauce ingredients into a large wok until it was boiling and then I put a lid on it turned the temperature down whilst I prepared everything else.
I created a paste in a non-stick pan from the low-calorie spray, thyme, chilli flakes, tomato puree and the water and then added the chicken breast chunks. I then cooked the chicken until it started to burn slightly on the edges to give it added flavour. Whilst this was cooking I boiled some plain rice to have with it but you could have it with salad, in a pita or with some seasonal vegetables.
It was a little bit spicy for one of my girls but we stirred in some quark and it made it less spicy so if you want all the taste but less heat I recommend doing this after removing from the heat.
