Getting creative with GoodLife – Falafel and Pumpkin Tagine recipe

I am always trying to eat healthier and that means trying to eat lots more vegetables. The problem is that sometimes getting enough vegetables is not as easy as it seems so when I was asked if I wanted to work with GoodLife I jumped at the chance. GoodLife make a range of frozen products using some of the finest vegetables that they can find. The range varies from full meals to sausages, burgers and more.

I purchased these four frozen GoodLife products from Sainsburys and I couldn’t wait to try them. I had one of the Mushroom & Spinach Kiev for lunch one day and it was absolutely delicious with a fantastic taste and texture so I will definitely be buying them again.

As we have just come back from Morocco I decided to use the GoodLife Falafel to make a falafel and Pumpkin tagine served with couscous and it was better than I could have hoped. Check out the recipe below

Ingredients – serves 4

  • GoodLife Falafel
  • 1 small cooking pumpkin
  • 1 red pepper
  • 1 large white onion
  • 400g tin of chickpeas (drained and washed)
  • Sprinkle of saffron
  • 1 tbsp Moroccan spice mix
  • Hot water or vegetable stock

Cook the GoodLife Falafel as per the instructions on the box. Whilst the GoodLife Falafel is cooking, soft the onions in a wok and then add the red pepper and the pumpkin (sliced into small 1cm cubes). After 5 minutes add the spice mix, saffron and enough hot water/vegetable stock to cover the vegetables. Bring to the boil and then add the chickpeas and leave to simmer until the pumpkin is soft. Add additional liquid if required. Serve with couscous of your choice.

The GoodLife Falafel was absolutely perfect in this tagine and we all really enjoyed it. You can tweak the recipe to your taste and add garlic and chilli as well as currents or dried apricots but as I was cooking this for the whole family I decided to keep it simple.

I haven’t tried the GoodLife Vegetable Masala or the french bean and spinach sausages yet but if they are as tasty as the Falafel and the Kievs then I know they will be delicious.
