Slimming World Indian Fakeaway with Schwartz spices

The lovely folks at Schwartz had heard that I was on Slimming World and challenged me to make my very own delicious Indian fake-away using their spices.

Although GamingDaddyofTwo and I enjoy a spicy curry the girls both prefer a Korma so to tempt them to help me cook I decided to make a chicken korma, rice and vegetable pakoras. We decided to use the Schwartz Korma Spice for each of these recipes.

First up Elizabeth helped me make the vegetable pakora. I chopped and prepped the following ingredients for her so she could make them almost by herself.

3 Medium jacket potatoes – cooked, inner mashed (no butter or milk)
1 diced red onion
1 bowl defrosted chopped frozen vegetable mix
2 Tbsp Schwartz Korma Curry Powder
4 Tbsp Fat Free Yogurt
1 Egg Beaten
Low Calorie Cooking Spray

To get started I preheated the oven to 200 degrees/180 degrees Fan/ Gas Mark 6

Chop the onion, garlic and ginger in a food processor.
Add to pan and start to cook.
When everything is cooking add the chopped chicken breast and the chopped pepper.
Cook for five minutes and then add the stock and mushrooms.
Add the lid and simmer until the chicken is cooked. Boil rice whilst this is simmering.
Once the chicken is cooked remove from the heat and stir in the greek yogurt. Add coriander to taste/decorate depending on your preferences.

We enjoyed cooking this together and with the spice blend coming in at 7 syns per 3 tbsp the whole recipe contains just 14 syns. Split between 4 this is just 3.5 syns for a main course and a starter that rivals any takeaway!
