Starting the week as I mean to go on my lunch today consisted of Pizza Omelette. I found this recipe on the slimming world website but obviously tweaked it somewhat. I added Olives and hot sauce to give it some flavour and went for a thicker base so used three eggs and a splash of milk. This does give it a more omelette texture but I found it was more palatable that way. A great lunch using only a few syns for the olives and splash of milk and my healthy B on the cheese.
